And now, I make it every week. Seriously, who can say no to these crunchy nutty little bites of chicken? And this recipe could be the best sesame chicken you ever had. 🥢 RECIPE - Note: Here I want to correct a mistake in the video. At 03:16 I said to heat up the oil to 300 degrees Fahrenheit. It was an audio mistake, please keep the oil temperature at 380 degrees Fahrenheit while frying. I am really sorry about that. The video is already uploaded, I can't edit it anymore. Ingredients to marinate the chicken (Serve 2-3 people with some white rice) - 1 lb chicken thigh, cut into 1.5 inches cubes - 2 cloves of garlic - black pepper to taste - 1.5 tsp of soy sauce [Amazon Link: 🤍 - 1/2 tsp of salt - 3/8 tsp of baking soda - 1 egg white - 0.5 tbsp of starch (add it to the marinade) - 1 cup of Potato starch (use it to coat the chicken) - 2 cups of oil to fry the chicken Ingredients for the sauce - 2 tbsp of Honey - 3 tbsp of brown sugar - 2.5 tbsp of Soy sauce [Amazon Link: 🤍 - 3 tbsp of water - 2.5 tbsp of ketchup - 1 tbsp of vinegar - Sweet potato starch water to thicken the sauce (2 tsp of potato starch mixed with 2 tsp of water) (Amazon Link: 🤍 - 1 tbsp of sesame oil [Amazon Link: 🤍 - 1.5 tbsp of toasted sesame seeds [Amazon Link: 🤍 - Diced scallion as a garnish INSTRUCTION Cut some boneless and skin on chicken leg into 1-inch size pieces. You can use chicken breast if you wish to. Marinate the chicken with 1 tsp of grated garlic, 1.5 tsp of soy sauce, 1/2 tsp of salt, some black pepper to taste, 3/8 tsp of baking soda, 1 egg white, and 1/2 tbsp of starch. Cornstarch, potato or sweet potato starch, they all work, depends on what you used for the coating later. Mix everything until well combined. Cover it and let it sit for 40 minutes. Add half of the starch into a big container. Spread it out. Add in the chicken. Cover the meat with the other half of the starch. Put on the lid and shake for a few minutes or until the chicken is coated nicely Heat up the oil to 380 F. Add the chicken piece by piece. In less than 2 minutes, you can feel that the surface is getting crispy and the color is slightly yellow. Take them out. Then we gonna do the second batch. Before that, you might want to fish out all those small little bits. It is optional but it does affect the quality of the oil. Keep the temperature at 380 F, and fry the second batch of the chicken. Once you are done, let all the chicken rest for about 15 minutes and we gonna double fry the chicken. Double frying will stabilize the crunchiness so it last longer. At the end we will coat the chicken with some glossy sauce If you don’t double fry it, the chicken might not be crispy while serving. You just keep an eye on the color. In about 2 or 3 minutes, it will reach that beautiful golden color. Take them out and set it aside. Next, we gonna make the sauce. In a large bowl, add in 3 tbsp of brown sugar, 2 tbsp of liquid honey, 2.5 tbsp of soy sauce, 2.5 tbsp of ketchup, 3 tbsp of water, 1 tbsp of vinegar. Mix them until well combined. Put your wok on the stove and pour all the sauce in. There is some sugar sink in the bottom of the bowl, make sure you clean that. Keep stirring the sauce on medium heat. Bring it to a boil and pour in some potato starch water to thicken the sauce. This just 2 tsp of potato starch mixed with 2 tsp of water. Keep stirring until it reaches a thin syrup texture. Introduce the chicken back into the wok, along with a drizzle of sesame oil and 1.5 tbsp of a toasted sesame seed. Toss everything until the chicken is coated nicely. Take them out. Garnish it with some diced scallion and you are done.

Watch part two of making every chinese takeout dish here: 🤍 1:11 Egg Rolls 7:08 House Lo Mein 13:33 Beef and Broccoli 18:47 General Tso's Chicken General Tso's Chicken Recipe: Ingredients: 1 pound of Boneless Skinless Chicken Thigh, cut into pieces Soy Sauce 1 tablespoon of Minced Ginger 1 tablespoon of Minced Garlic Chinese Cooking Wine Corn Starch Baking Soda 1 egg white scallions rice vinegar sugar dried chili (fresh works if you only have freshy fresh) Directions: 1. Add one egg white into a bowl and beat lightly with a fork. 2. Add 3 tablespoons of soy and Cooking Wine. Add 1/4 teaspoon baking soda. 3-4 tablespoons of Corn Starch and mix together. 3. Add chicken and let marinate while you work on the sauce. 4. In another bowl add a cup of corn starch, 1 teaspoon of salt and 1/2 teaspoon of baking soda and mix up. Set aside 5. In a third bowl add 3 tablespoons soy sauce, 2 tablespoons of rice wine, 2 tablespoons of rice vinegar, 3 tablespoons of sugar, a splash of sesame oil and 1 tablespoon of corn starch. 6. Dip the chicken and coat it well in the dry corn starch mixture. 7. Fry up that chicken in oil at 350-375 until it is glorious and golden. Drain on paper towel. 8. In a wok or large pan add some neutral oil (like vegetable), get it hot and toss in scallions, minced ginger and garlic and 1-3 dried chili (depending on your tough guy heat factor), mix it up and let it fry on high heat for 30 seconds or until it starts to color. 9. Toss in your master sauce and mix it around until it starts to boil and thicken up. 10. Toss your chicken in the sauce and mix around to coat it. Boom you are done! Egg Rolls INGREDIENTS: Egg/Spring roll wrappers ½ cup of thinly julienned carrots ½ cup thinly julienned red peppers 1 cup chopped cabbage 1 tbsp soy sauce 1 tsp sesame oil ½ tsp oyster sauce 2 tsp sugar ¼ lb. ground pork 3 tbsp scallions 1 tsp ginger 1 tbsp garlic In a wok, heat a tbsp. of canola oil and toss in scallions, ginger and garlic. Allow to cook down. Add in your peppers, carrots and cabbage. Stir and allow it to wilt. Push all the ingredients to one side of the wok. Grease the open space on the wok and toss in the ground pork. Allow it to develop some color. Mix with the rest of the veggies in the wok. Add soy sauce, oyster sauce, sesame oil and sugar. Stir everything together and remove. Lay down your egg roll wrap on a flat surface and add about 2 heaping tablespoons of your pork filling. Lightly moisten the edges of the wrap. Fold over 2 ends of the wrap and then fold it over and roll making sure to seal the end with some more water to prevent it from opening or letting anything ooze out. Heat oil in a frying pan over medium heat and carefully add your eggrolls. Allow it to cook until crispy and golden brown on all sides. Enjoy! Beef & Broccoli ½ lb. beef of your choice- thinly sliced 2 tbsp soy sauce 1 tbsp cornstarch 1 tsp oyster sauce 1 tbsp Chinese cooking wine Sesame oil Florets of 1 head of broccoli Scallions Ginger Sesame seeds In a bowl, mix soy sauce, corn starch, oyster sauce and cooking wine. Whisk until cornstarch dissolves. Set aside. Marinate your beef w/ a couple of tbsp. of soy sauce & 1 tsp sesame oil. Allow it to marinate for 10-15 minutes. in a wok, heat ¼ cup of water and toss in your broccoli florets and sprinkle with a pinch of salt. Allow to cook until water has almost completely cooked out. Remove. Add another splash of canola oil into your wok and toss in ¼ cup scallion, 1 tbsp garlic and 1 tsp ginger. Stir and allow it to cook down. Mix in broccoli and beef. Add in your cornstarch mixture that we made in the beginning. Stir everything together until well coated. Sprinkle with sesame seeds. Stir and serve. Sometimes after the practice, I would turn these plain left over rice into something quiet magical for everyone. Fried rice! 2 oz of small shrimp 2 oz of small scallops 1 tablespoon of butter 1 teaspoon of minced ginger 2 tablespoons of onion, cut into small cubes 2 tablespoon of red bell peppers, cut into cubes 4 mushrooms, cut into small cubes A pinch of black pepper 2 beaten eggs 1 cup of rice A teaspoon of soy sauce A pinch of salt A pinch of sugar A tablespoon of oil A tablespoon of chopped cilantro A tablespoon of minced scallions Chopped an onion into little cubes. Boil water in a pot, add a tablespoon of shaoxing wine and a pinch of pepper to remove the fishy taste of the seafood. Blanch 2 ounces of small shrimp and 2 ounces of small scallions. Take them out and drain. In a pan, add 1 tablespoon of butter, 1 teaspoon of minced ginger, 2 tablespoons of chopped onion, 2 tablespoon of chopped red bell peppers, 4 pieces of chopped mushrooms, a pinch of black pepper and wait until the aroma comes out. Add 2 beaten eggs and wait until they are partially cooked. Add 1 cup of rice and mix until combined, then add 1 teaspoon of soy sauce, a pinch of salt, a pinch of sugar. If you think the fried rice is a bit too dry, you can add 1 tablespoon of oil. Stir fry. Lastly, add 1 tablespoon of chopped cilantro and 1 tablespoon of minced scallions. Full recipe: 🤍 Stir-Fry Beef and Scallions Recipe Serve: 2 Prep Time: 30 minutes Cook Time: 5 minutes For the beef and marinades: 1 1/2 pound New York Strip Steak, sliced into 1/3 inch pieces, against the grain Dash of soy sauce Pinch of salt Pinch of white pepper 1 egg white 1 tablespoon cornstarch slurry (1 tablespoon cornstarch slurry and 1 tablespoon water) (1 tablespoon extra light olive oil) For the salt water: 3 cups water 1/3 teaspoon salt For the sauce: 2 tablespoons soy sauce 1 tablespoon dark soy sauce 2 tablespoons Shaoxing wine 1/3 teaspoon sugar Pinch of white pepper Dash of sesame oil Side ingredients: 6 stalks scallions, cut into 1 1/2 inches pieces, divide the green and white parts 3 garlic cloves, smashed 3 ginger slices 3 tablespoons extra light olive oil Instructions: 1. In a large bowl, add in the beef, water, and salt. Mix well. Soak the beef for 10 minutes to remove blood. (The salt water will also help to tenderize the beef.) Squeeze the water out. 2. In a bowl, transfer in the beef, and add the marinades: soy sauce, salt, white pepper, egg white, cornstarch slurry. Mix well. (Both egg white and cornstarch will help to tenderize the beef. As a tenderizing agent, Chinese restaurants usually also add a pinch of baking soda. But since New York Strip is already very tender, we will skip baking soda.) Marinate for 10 minutes. 3. To make the sauce, in a bowl, add soy sauce, dark soy sauce, Shaoxing wine, sugar, salt, white pepper, sesame oil. Mix well. 4. * Follow this step if you are using an iron wok, and skip it if you are a nonstick pan: To prepare the wok and add a nonstick layer to it, first, turn to high heat until smoking. Then add about 1/2 cup of vegetable oil in it (you can also use other types of high smoking point oil), move it inside the pan a bit, and make sure every part of the wok has a layer of oil on it. Pour out the oil (after the oil is cooled, you can put it in a jar, and store it in a cool place. You can still use it this way next time. ) The wok has a nonstick coating on it now. 5. To stir-fry the beef, first, over high heat, heat the wok until smoking. Then, add about 2 tablespoons of extra light olive oil in it. Heat it up until warm, about 15 seconds. Add the beef. Let it sear for about 30 seconds without touching it. (So it has a light crust on the bottom and won’t stick to the wok.) (Normally, for the meat not sticking to the wok, we use hot wok and cool oil. But I used hot wok and warm oil method today. Because if the temperature isn’t high enough, beef will release water content, and create a tougher texture.) Stir-fry until medium-well, about 1 minute. Take it out and set aside. 6. In the wok, heat it over high heat until smoking, add 1 tablespoon of extra light olive oil. Then add in the ginger, white part of scallions, and garlic. Stir-fry until aromatic, 30 seconds. Add back the beef slices, add the sauce, and quickly stir-fry everything together. Lastly, and in the green part of scallions. Mix well.
